Black cod carbonara

Ingredients

Black cod in sweet miso
1 fillet
Heavy cream
5 tbsp
Parmegiano reggiano (grated)
4 tbsp
Garlic
1 clove
Olive oil
3 tbsp
White wine
10cc
Egg
2
Black pepper
a pinch
Water
1000ml
Salt (for boil)
1 tbsp

Directions

  1. Cook pasta in boiling water.
  2. Finely chop garlic.
  3. Heat olive oil in skillet. Grill cut black cod both sides over low heat.
  4. Once grilled, remove cod from skillet.
  5. Add some olive oil in the same skillet. Saute chopped garlic over low heat for 2-3 minutes.
  6. Pour heavy cream and white wine. Cook until alcohol evaporates.
  7. Cook pasta al dente and add it to skillet. Add cheese. Stir lightly over low heat.
  8. Turn the heat off. Add egg. Toss and plate.
  9. Topped with grilled black cod and black pepper.
