Fried oyster California rolls




Sushi rolls with big, juicy, fried oysters: as fun to look at as they are to eat!

Rekura is a popular food truck company. Its fleet of vehicles operate primarily in the Marunouchi area and other parts of Tokyo, offering a range of menu items. Rekura also produced the food truck space “Ff,” which opened in January 2021.

Fried oysters
Cooked rice
200 g
Nori sheet
White sesame seeds
25 g
Sunny lettuce
1 leaf
Carrot, julienned
20 g
Tartar sauce
50 g
Shibazuke pickles, julienned
20 g


  1. Deep-fry the fried oysters.
  2. Arrange rice on the nori sheet and sprinkle the entire length with the white sesame seeds.
  3. Lay some plastic film on top of the nori sheet, rice, and sesame seeds. Carefully turn the whole thing over so that the plastic film is at the bottom and the other side of the nori sheet is on top.
  4. Put the sunny lettuce on top of the nori sheet.
  5. Arrange the fried oysters, julienned carrot, tartar sauce, and shibazuke pickles on top of the sunny lettuce.
  6. Wrap the whole thing into a sushi roll, being careful not to allow the nori to overlap with itself.
  7. Cut into 3 cm lengths and serve.
