Super easy to make authentic green curry using canned mackerel!

Ingredients

Vegetable oil
1 tbsp
Onion (sliced)
1/2
Red paprika (shredded)
1
Baby spinach
50g
Green curry paste
80g
Coconut milk
1 can (400ml)
Water
200ml
Sugar
1 tbsp
Fish sauce
2 tbsp
Canned mackerel
1 can

Directions

  1. Heat oil in a skillet. Saute onion until soft.
  2. Add curry paste and cook until fragrant. Add red paprika.
  3. Add coconut milk, water. Bring it to boil. Add baby spinach and canned mackerel.
  4. Bring it to boil again and turn the heat off. Add sugar, nam pla to taste.

Remarks

Add spinach in the very end in order to keep nice green color of spinach.
