Ingredients
- Vegetable oil
- 1 tbsp
- Onion (sliced)
- 1/2
- Red paprika (shredded)
- 1
- Baby spinach
- 50g
- Green curry paste
- 80g
- Coconut milk
- 1 can (400ml)
- Water
- 200ml
- Sugar
- 1 tbsp
- Fish sauce
- 2 tbsp
- Canned mackerel
- 1 can
Directions
- Heat oil in a skillet. Saute onion until soft.
- Add curry paste and cook until fragrant. Add red paprika.
- Add coconut milk, water. Bring it to boil. Add baby spinach and canned mackerel.
- Bring it to boil again and turn the heat off. Add sugar, nam pla to taste.
Remarks
Add spinach in the very end in order to keep nice green color of spinach.
